Ingredients required for Ras Malai :
- Milk 1 liter
- Sugar 1/2 cup
- Cardamom powder 1tsp
- Rose water 1 tbsp
- Chopped pistachios 10-15
- .Chopped Almonds 10-15
- .Chopped cashews 10-15
For Malai Balls:
1.Milk 1 liter
2. Lemon juice 2-4 spoons
3. Silver or gold leaf (optional, for garnish)

Cooking Instructions for Ras Malai Recipe
In a large pot add the milk to a boil over medium heat. Stir continuously.
As the milk boils, reduce the heat to low and add the lemon juice. Stir gently until the milk curdles and separates into curds.
Turn off the heat and strain the curds through a muslin cloth. Rinse the curds under cold water to remove any lemony flavor.
Squeeze out excess water from the curds through cloth. Hang the cloth to drain for about 30 minutes.
After draining, transfer the drained curds to a clean bowl. Knead the curds with your hands until it forms a smooth dough.
Divide the dough into small portions and roll them to form smooth balls.
In another pot, combine water, sugar and cardamom powder. Bring to a boil, stirring until the sugar dissolves.
Gently drop the prepared balls into the boiling sugar syrup. Cover and simmer for about 15-20 minutes, or until the balls are cooked and doubled in size.
Once cooked, remove the balls from the syrup and let them cool slightly.
For Milk Mixture:
Boil the milk in a wide pan and simmer it until it reduces to half the quantity,keep stirring.
Add sugar and cardamom powder to the milk, stir until the sugar dissolves.
Once the milk thickens to a slightly creamy consistency, turn off the heat and let it cool.
Drop the paneer balls into the cooled milk mixture and refrigerate for a few hours.
In a separate bowl, mix rose water with some water. Soak the cooked balls in the rose water mixture for a few minutes.
Arrange the soaked balls on a serving dish and pour any remaining rose water over them.
Garnish with chopped pistachios, almonds, cashews, dates, and raisins. Optionally, add silver or gold leaf for a festive touch.
