Arabian Laham Madni(Arabian Rice with Vegetable and Nuts)
Laham Madni is a great Arabian Cusine. This Arabian dish has unique taste and ingredients including Meat, vegetables, and Nuts.
Ingredients
- Mutton: 1 kg
- Rice 2 cups: (soaked for half an hour)
- Carrots: 2 (grated)
- Capsicum: 2 (sliced)
- Almond: ½ cup
- All mixed Nuts: ½ cup
- Chicken stock: 4 cups
- Olive oil: 4 tablespoon
- Green cardamom: 4
- Cloves: 4
- Black pepper: 10
- Nutmeg: 1 pinch
- Bay leaves:2
- Ginger powder: 1 teaspoon
- Salt as required
- Lemon: 4 (sliced)
- Water:1 cup
Cooking Directions
To make mandi spice put nutmeg, ginger powder, black pepper, and cloves in a grinder and make a powder.
- Now put the ground spices in a bowl and add lemon, salt, 2-tablespoon oil, and 1 cup water.
- Apply these spices to the mutton and leave for a few hours.
- Tightly pack the oven dish with aluminum foil.
- Now, bake it in the oven for 40-45 minutes.
- Take out from the oven and cook on fire until water dries up.
- Inflame a small piece of coal and put it in the middle of the pan with mutton.
- Now sprinkle a few drops of oil on the coal and cover the pan tightly.
- Heat remaining 2 tbsp. oil in a pan and add chicken stock. Boil for a minute.
- Now put one teaspoon mandi spice.
- Add rice and water and cook. When only a little water is left, add carrot and capsicum.
- Cover and steam on the lowest heat for 10 – 15 minutes.
- When the rice is cooked, put on a platter and place mutton on top.
- Garnish with mixed nuts and almonds(sliced or whole) and serve hot.
