Kachori with Yellow Lentil (Spiced Lentil filled Fried Pastries)
Kachori is a snack that is extremely tasty and has spices in it. Kachori is a south Asian snack commonly used in Pakistan and India. During Ramzan Kachori is served as the most favorite dish in Iftaar. It is easy to make and can be served as a party snack.
Ingredients required to make Kachori dough:
1. Flour 2cups
2. Salt (½ tsp) or to taste
3. Oil (¼ cup)
4. Water (as required)
Ingredients required for Kachori filling:
1. Yellow lentil (½ cup)
2. Coriander (2 tbsp) (chopped)
3. Fennel seeds (½ tsp) (crushed)
4. Red chili powder (½ tsp)
5. Allspice powder (¼ tsp)
6. Cumin powder (½ tsp)
7. Green Chili (1 crushed)
8. Garlic powder (½ tsp)
9. Salt (1 tsp) or to taste
10. Oil (to fry)
Method to Prepare Kachori Dough:
Take a bowl and add flour in it. Now add salt and then add oil mix well with clean hands. After that knead the mixture well. Now add water (as needed) and knead well. Make smooth dough covers it for at least 15 minutes and knead again well once and now the dough is ready.
Kachori Filling and cooking Instructions:
In a bowl take yellow lentil to wash it properly and soak it for 15-20 minutes, boil it till cooked and grind well. Now take a large bowl to add boiled and ground yellow lentil and add red chili powder, salt, fennel seeds, allspice powder, coriander, and garlic powder. Mix everything well and add green chili (crushed). Mix everything very well to prepare a perfect filling.
Now divide the dough in small balls and flatten it as a small size circle place the filling on flattening the surface of the dough in the midpoint then cover filling with remaining part of the circle and deep fry it.
Fry all the kachoris one by one and serve with ketchup and green sauce.
