Kerala Chicken Recipe | Bitter Gourd with Chicken Recipe

Bitter gourd or Kerala is a different and healthy vegetable and people, especially in South Asia love bitter gourd. Although its taste is bitter and if our taste with Karela is not developed we may not like it if we are new to it most people love its bitter taste mixed with onions or any type of meat. From a health aspect bitter gourd is best for maintaining sugar levels in the body. These are the best food for sugar patients. Karela also helps in purifying blood and clearing the skin complexion. Most people use karela juice for weight loss and improving skin complexion.
Ingredients to Make Karela Chicken:
- Bitter Gourd(Karela) 1 kg
- Chicken 1 kg
- Onions(sliced) 2 large
- Ginger paste 1 tsp
- Garlic paste 1 tsp
- Tomatoes 3 medium
- Chilli powder 1 tsp
- Salt 1/2 tsp
- Garam Masala 1 tsp
- Oil half cup
Instructions to Make Bitter Gourd(Karela):
- Wash the bitter gourd well and remove the seeds. Now make thin slices sprinkle salt on them and put aside for at least 1 hour to decrease the bitterness.
- After 1 hour wash Karela well drain the water 3-4 times and squeeze well to remove extra salt.
- Now in a wok add half a cup of oil and fry the karela well till crispy and put aside.
- In another pan change the oil add onions and fry them till pink. Now add chicken with ginger garlic paste and fry well then add chili powder, salt, and garam masala mix well and cover with a lid and leave on low flame till the chicken leaves its water.
- Keep cooking till the chicken is almost cooked.
- No add karela and stir fry for 5 minutes till both chicken and karela are combined.
- Chicken Karela with excellent taste is ready.
- Enjoy with with Bread.
