Recipe for Aloo Bukhara Sharbat:
Ingredients:
- 500g Aloo Bukhara (dried plums)
- 1.5 liters water
- 2 cups sugar
- 1/4 teaspoon salt
- 2-3 tablespoons lemon juice
- 1/4 teaspoon black salt
- 1/4 teaspoon roasted cumin powder
- A few sprigs of fresh mint leaves
Instructions:
- Soak the Aloo Bukhara in 1.5 liters of water for at least 8 hours or overnight.
- In a large pot, bring the soaked Aloo Bukhara and water to a boil. Reduce heat and simmer for 15-20 minutes until the Aloo Bukhara are soft and pulpy.
- Allow the mixture to cool for a few minutes, then strain it through a fine mesh strainer or muslin cloth to remove any solids.
- Add sugar and salt to the strained Aloo Bukhara mixture and stir until the sugar is dissolved.
- Add lemon juice, black salt, roasted cumin powder, and mint leaves to the mixture and stir well.
- Chill the sharbat in the refrigerator for at least 1 hour before serving. Garnish with fresh mint leaves and serve cold.
