Sindhi Masala Biryani

Sindhi Masala Biryani is a crispy Biryani Recipe as it has fried potatoes and Fried Chicken mixed with steamed rice. It’s aromatic and its crispy taste makes it a very different Sindhi Biryani  

Ingredients

  • Chicken 1 kg
  • Onion medium:4
  • Bay leaf (Tej Patta): 1
  • Cinnamon (Dar Cheeni): 3-4 small sticks
  • Cardamon (Bari Ilaiche): 3
  • Green cardamom (Hari Ilaichi): 6
  • Yogurt: 1 cup
  • Dried plums (Alubukharay): 10-12
  • Potatoes: Half KG
  • Lemon juice: 2 teaspoon
  • white Cumin (Sufaid Zeera): 1 teaspoon
  • Coriander powder: 2 teaspoon
  • Clove (long): 6
  • Black pepper (Whole): 12
  • Turmeric: 1 tablespoon
  • Garam masala: 1 tablespoon
  • Ginger-garlic paste: 2 tablespoon
  • Red pepper: 2 tablespoons (or as to taste)
  • Coriander: 1 cup
  • Tomatoes: 5
  • Rice: 4 cups
  • Onion(golden brown): 2
  • Salt to taste

Cooking Directions

  1. Boil water in a large pot with white cumin, cloves cardamom, and green cardamom.
  2. Put rice in the boiling water.
  3. Fry onions in the Oil
  4. Peel the Potatoes and cut and Fry potatoes.
  5. Shallow Fry chicken in a pan in oil.
  6. Add ginger-garlic paste and fried onions.
  7. Also add cinnamon, black pepper, green cardamom cumin, cloves, and bay leaves.
  8. Cook for five minutes and then add yogurt and all dry spices.
  9. Add plum and fried potatoes.
  10. Add one cup of water and green seasonings like chilies, coriander, and mint.
  11. Add fried tomatoes to the chicken masala.
  12. Place the layer of rice in a pan and then a layer of chicken curry. Put a layer of rice again on the top, put coriander, and mint lastly.
  13. Put the biryani to steam for a few minutes before serving.
